Meet Chef Dewa

Born in Bali and trained in the classical French tradition, Chef Dewa Wijaya has spent a lifetime exploring the profound relationship between food, place, and well-being. Over more than two decades with COMO Hotels and Resorts — including as Executive Chef of the iconic COMO Shambhala Estate and the celebrated COMO Parrot Cay — he earned a global reputation for cuisine that honors both the land and the body. At Nourish, he brings that philosophy home to the East End: cooking rooted in local farms and fishermen, enlivened with the flavors that shaped him growing up in Bali.

Nourish's bar and mixology program are designed and overseen by Takuma Watanabe, the Tokyo-born founder and beverage director behind Martiny's, the famed New York City bar that was named #15 of North America’s Best Bars in 2025. Watanabe is a partner at Odo Hospitality, the group behind New York’s two-Michelin-starred Odo Restaurant. Honored as Bartender of the Year at the Spirits Business Awards, Best Bartender in North America at the Shaker Awards, and a 2025 James Beard semifinalist, Watanabe debuts his celebrated Japanese-influenced mixology in the Hamptons for the first time.


His program at Nourish follows the rhythm of the East End's growing season, drawing on locally foraged botanicals, fruit from Long Island orchards, and produce from the same Hamptons farms that supply Chef Wijaya's kitchen.

The Space

Nourish seats 120 guests across three distinct settings: a 70-seat main dining room, a 20-seat bar, and a 30-seat outdoor garden. The design draws on the relaxed elegance of the Hamptons—exposed wood, warm timber, and natural materials create an atmosphere that feels grounded and organic, while large windows flood the space with natural light and views of the surrounding landscape.


Whether you're joining us at the bar for cocktails, settling into the dining room for a long dinner, or enjoying the garden on a summer evening, the experience is designed to feel unhurried and welcoming.
